Ingredients:
400g fresh tortellini (filled with meat)
100g prosciutto crudo (thinly sliced, chopped)
2-3 tbsp olive oil
200ml heavy cream (crema)
2 cloves garlic (minced)
Salt and freshly ground black pepper
Grated Parmesan cheese (optional)
Fresh parsley (chopped, for garnish)
Instructions:
1. Cook the Tortellini
Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions (usually 2-4 minutes for fresh tortellini). Reserve a cup of pasta water, then drain and set aside.
2. Prepare the Sauce
Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add the chopped prosciutto crudo and cook for another 2-3 minutes until slightly crispy.
3. Add the Cream
Lower the heat to medium-low and stir in the heavy cream. Let it simmer gently for 2-3 minutes. If the sauce is too thick, add a splash of the reserved pasta water to thin it out.
4. Combine with Tortellini
Add the cooked tortellini to the skillet. Toss gently to coat them in the creamy sauce. Season with salt and freshly ground black pepper to taste.
5. Serve
Plate the tortellini and sprinkle with grated Parmesan cheese, if desired. Garnish with fresh parsley for a touch of color.
